Overwhelmed by zucchini? This absolutely delicious relish will bring joy to every sandwich in those dark zucchini-less Winter days, great with cold meats, to add some zing to your vegetable dishes, or just to give away as beautiful presents and have friends gasp in awe at your homesteader brilliance! So delicious you might be tempted to plant even more zucchini plant next Summer (don’t fall into that trap! It’s great, but remember at the start? How you were OVERWHELMED with zucchini…?)
Zucchini Relish
Ingredients
- 1 kg Zucchini – julienned
- 500 g Spanish or brown onion – grated
- 1 capsicum sliced in thin strips
- 1.5 TBS salt
- 750 g white sugar
- 500 ml cider or white vinegar
- Wood Duck Spice Relish Blend
- 2 or more chopped fresh chillies *if you like things spicy
Instructions
- Place Zucchini, capsicum, onion and salt in a bowl and cover with water.
- Leave to brine overnight, then rinse and drain well.
- Place in large saucepan with sugar, vinegar,(chillies if using) and Wood Duck Spice.
- Bring to the boil then simmer for 10 minutes.
- Bottle into hot sterilized jars.
