Zucch relish

Zucchini Relish

Ingredients
  

  • 1 kg Zucchini - julienned
  • 500 g Spanish or brown onion - grated
  • 1 capsicum sliced in thin strips
  • 1.5 TBS salt
  • 750 g white sugar
  • 500 ml cider or white vinegar
  • Wood Duck Spice Relish Blend
  • 2 or more chopped fresh chillies *if you like things spicy

Instructions
 

  • Place Zucchini, capsicum, onion and salt in a bowl and cover with water.
  • Leave to brine overnight, then rinse and drain well.
  • Place in large saucepan with sugar, vinegar,(chillies if using) and Wood Duck Spice.
  • Bring to the boil then simmer for 10 minutes.
  • Bottle into hot sterilized jars.
