Vadouvan Curry

Vadouvan is a delicious French twist on a curry powder.

Traditional French flavours like shallots, onion, and garlic are combined with Indian spices like turmeric, cardamon, curry leaves,  black mustard seeds, and fenugreek then dried and ground into a course spice blend.

Rich, sweet and not hot this curry blend was developed in the former French colony of Pondicherry and travelled back to France where it has become a staple of traditional cuisine.

It gives a warm, golden, spicy curry glow to fish, prawns, chicken, soups, stews and vegetable dishes.  It is the perfect base for a kedgeree and can even be sprinkled over salads.
