Christmas Puddlings

Delicious Christmassy little morsels. They look, smell and taste very festive indeed.

  • 800 g fruitcake
  • 200 g dark chocolate

  • Wizz fruitcake, boozy fruit and Christmas Spice together in a food processor.
  • Mix together with melted chocolate in a large bowl
  • Allow to cool.
  • Roll in teaspoons full into balls and place on a baking paper lined tray in the fridge until cold.
  • Melt white chocolate and cut red and green lollies or cherries into tiny pieces.
  • Drizzle 1/4 or less of a teaspoon of white chocolate over the top of each puddling ball and decorate with some red and green.
  • Store in the fridge.

Notes

Boozy Fruit is something I keep on hand to add a bit of ‘zing’ to otherwise boring desserts.
Just fill a jar with assorted dried fruit, some whole spices (Wood Duck make a ‘boozy fruit’ pack or just reuse the spices from your Wood Duck Mulling Spice) and rum (or liquor of choice) and keep to use when needed.
*The puddlings in the picture have decorations made from red and green fondant.  While they look extremely cute, the time it took to make each one, compared to the time it took to see them disappear into peoples mouths?  Maybe save that for a special occasion!
