Lemon & Strawberry Super Slice
Easy, versatile, delicious sweet slice recipe – works perfectly Gluten Free!
Ingredients
- 250 g butter
- 1/2 cup sugar add 3tsp of Wood Duck infused strawberry sugar if you have some
- 2 cup plain flour use your favourite GF flour if making GF
- 4 eggs
- 1 cup sugar
- 4 TBS plain flour
- 1 cup lemon juice or 3/4 cup lemon juice + 1/4 cup Wood Duck Elderflower cordial syrup
- 3 tsp lemon zest
- 1/2 cup coconut
- sliced strawberries
- 2 tsp Infused sugar Wood Duck Lemon is great
Instructions
- pre heat oven to 180
- line a large lamington tray with baking paper
- beat butter and 1/2 cup sugar (and infused strawberry if using) together with electric beaters
- add two cups of flour – mix until blended
- press mixture evenly into prepared tray
- Bake for 15 minutes until slightly golden
- mix sugar, flour, coconut and lemon zest together
- add eggs
- add lemon juice
- pour over baked base
- arrange strawberry slices on top
- sprinkle with infused sugar
- bake for 20 minutes (it will firm when it cools)
- Cool completely in tray
- Remove from tray and cut into squares
- store in airtight container in the refrigerator
