These are the most addictive biscuits you will ever eat. Sweet, salty, coconut-ty… No cup of coffee will ever be complete without one, two or 7 of these delicious bickies along side!
Brown Butter Coconut Biscuits
Ingredients
- 225 g butter 1 cup melted
- 125 g white sugar 2/3 cup
- 145 g soft brown sugar 3/4 cup
- 1 egg
- 1/2 tsp vanilla
- 175 g self raising flour 1 1/4 cups
- 1 tsp salt (flaked or rock)
- 240 g coconut (flaked, shredded or dessicated or a mix) 4 cups
Instructions
- *butter needs to be prepared at least an hour in advance*
- Melt butter in a saucepan over medium heatIt will melt, foam, go golden and eventually go brown.
- Watch and stir until brown and nutty smelling
- Pour into jug and add water if needed to to make one cup.Chill until solid (1 to 2 hours)
- Pre heat oven to 180Line two trays with baking paper
- Beat butter and sugars until fluffy
- add egg
- add vanilla
- Add flour (and salt) in two parts beating between
- Add coconut in two parts beating between.
- Place heaped teaspoons of mixture on trays with room to spread(you can roll for prettier biscuits)
- Bake for 9 to 11 minutes until golden* baking one tray at a time works best
- Cool for 2 minutes on tray then on a rack
