Beautiful Buttery Shortbread

A simple shortbread recipe – minimal effort for maximum flavour.

Easy Buttery Beautiful Shortbread


  • 250 g softened butter
  • 1/2 cup caster sugar
  • 1 TBS infused sugar Lemon, Lavender, Mint, Cinnamon, Strawberry, Watermelon, or Vanilla
  • 2 cups plain flour
  • 1/4 cup rice flour
  • 1/3 cup chopped nuts optional
  • 1/3 cup chopped dried fruit optional
  • Infused sugar for decoration


  • Pre- heat oven to 160C
  • Cream butter and sugars
  • Sift flours and add to sugar mix
  • Add nuts and fruit – if using
  • Knead gently to form a soft ball
  • Roll dough into two logs – wrap in baking paper – chill in fridge for 30mins.
  • Cut into 1/2cm slices
  • Top slices with infused sugar
  • Bake for 15 – 20mins until golden
  • Cool on trays.
  • Store in an air tight container when completely cool
