Decadent Corn on the Cob
BBQ corn on the cob with delicious spices, mayo and parmesan

- 4 Corn Cobs
- 2 TBSP Mayonaise
- 3 TBSP Parmesan Cheese (finely grated)
- 2 tsp Wood Duck Fajita Spice
Place corn in a pot of water and bring to the boil
Heat BBQ grill
Take corn out of water and place on hot grill.Turn until all sides of the corn show some grill marks Spread mayonnaise over corn.
Sprinkle with Fajita spice mix
Roll corn in parmesan cheese

An alternative way to cook your corn, if you are able to get hold of corn fresh picked and still in it's papery husk is as follows:
Carefully peel back the corn husk 'leaves' and remove the silk.
Fold the husks back over the cob ( use strips torn from a husk to tie the tips together)
Soak the corn cobs on a large pot or bucket for at least 1/2 an hour or up to 8 hours.
BBQ the entire corn parcel on a very hot grill plate for 20 - 30 mins turning frequently.
Remove from grill, unwrap and follow the steps from there.
